My mission:  Bake 4 Pumpkin Pies!  So, here’s what I already had in my cupboards to make four 9” regular (not deep dish) pumpkin pies:  3 cans of pumpkin, eggs, and all the dry ingredients. All 3 cans of pumpkin had different recipes listed on the back and the larger can had added ingredients to the pumpkin.  To simplify my plan, here’s what I decided.

I put back the larger can of pumpkin with the extra added ingredients in my cupboard to use at another time. I headed to the grocery store to buy another small can of pumpkin, evaporated milk and already made pie crusts. I followed the recipe on the back of the Libby’s Pumpkin Pie can.  It took about 10 minutes to mix and about 45 minutes to bake.  As it turns out, I had more than enough pumpkin pie mixture to fill four regular pies. My husband couldn't wait 'til Thanksgiving.  He's already sampled one of the pies! I guess he likes it...he went back for seconds!
