You Can Totally Cook This – Leslie’s Italian Chicken and Cauliflower [RECIPE]
Even though I am a self proclaimed non-cooker, I realized recently that I cook a little more than even I realized. Most of the time, my cooking inspiration comes form me trying to imitate something I've had at a restaurant. I have no original cooking thoughts of my own. Quenton and I will be eating out and both or one of us will day, We can totally cook this at home. Sometimes it works out and some times it's a huge failure. But, at least we try.
My latest take on a restaurant fave is the Italian Garlic Roasted Califlower appetizer from Old Chicago Pizza. We ordered it with our pizza in the place of breadsticks. It was AMAZING. So, our eyes met and we uttered the words, We can totally cook this...and so can YOU.
We wanted to turn it into a meal so we added chicken and it was amazing.
This is what you need.
- 3 or 4 boneless, skinless, chicken breast cut in half
- a head of fresh califlower
- Two pkgs of McCormick One Sheet Pan Chicken Parmesan seasoning
- Grated Parmesan cheese (I don't measure, I just use the amount I want to taste)
- Shaded Mozzarella cheese (Above allies here too lol)
- Chef Paul's Pizza and Pasta Magic (So does this LOL)
- Tin Foil to line bakingsheet
- Non-stick spray
- Extra virgin olive oil
Follow the directions on spiced breading packets, just cut cilifloser into medium sized florets and place around chicken. Usr bruch to glaze cauliflower with olive oil. Sprinkle chicken and veggies with seasoning blend and parmesan cheese. With about 5 minutes left to bake, take out of over and sprinkle mozzarella cheese on chicken and cauliflower. Put back into oven and bake until done.
Here is the finished product. Yum.
The leftovers were delicious. we even ate the leftover cauliflower like was an appetizer and dipped it in Ranch dressing. So good. See, you can totally cook this.
