Spice Up Your Christmas Breakfast with this Delicious Slow Cooker Breakfast Burrito Bar
I love a good slow cooker recipe. I love to cook the traditional way, but have an incredibly busy schedule. Sometimes, I just want to come home and have dinner ready to roll. Come to think of it, I'd like breakfast to be that way sometimes too. Every Saturday and Sunday, I cook myself breakfast. I honestly have never thought about a slow cooker recipe for that particular meal, but my friend Patty Millay just came through with one that I can't wait to try. I have a hunch you're going to like this idea too. And it's just in time for the holiday season.
Here's how to make a Slow Cooker Breakfast Burrito Bar!
Everyone is so busy during the holidays, and everyone is also starving first thing in the morning! This is an excellent and easy way to provide a hearty breakfast for your family at a very economical price. This dish has very few ingredients and won't be more than about $1 per person!
SLOW COOKER BREAKFAST BURRITO BAR
2 lbs sausage (browned and crumbled)
1 red sweet pepper diced
1 small onion minced
1 lb shredded hash browns
4 cups shredded cheese (Patty mixed Velveeta and Cheddar)
1 dozen eggs
1 cup milk
salt and pepper
**optional extras: cream, salsa, jalapeños and taco sauce
Layer your crockpot with the 2 lb sausage, onion and sweet pepper mixture on the bottom. Add a layer of 2 cups of cheese. Add the hash browns on top and then add 1 more cup of cheese.
