Here's one of my favorite all-time Fall cookie recipes that my kids and family can't seem to get enough of! Your kids will love help making them, too. They're easy to make and way beyond delicious.

Besides the sugar, these scrumptious morsels are somewhat healthy for you!  lol. Okay- only if you eat 1 or 2, but, it's impossible...at least for me!  There's pumpkin, oats, and cinnamon in the mix and the result is a super moist-melt in your mouth-gotta have another-cookie that you've just gotta try!  Enjoy--anytime of the year!     :)

Deb's Pumpkin Chocolate Chip Cookies

1 ½ c butter (no subs), softened

2 c packed brown sugar

1 c sugar

1 can (15 oz) solid-pack pumpkin

1 egg

1 tsp. vanilla extract

4 c all-purpose flour

2 c quick oats

2 tsp. baking soda

2 tsp. salt

2 1/4 tsp. cinnamon

2 c (12 oz.) semisweet chocolate chips, (milk or dark chocolate chips)

 

In a large mixing bowl, cream butter and sugars.  Beat in the pumpkin, egg and vanilla.  Combine the flour, oats, baking soda, cinnamon and salt; gradually add to creamed mixture.  Stir in chocolate chips.  Drop by tablespoonfuls 2 inches apart onto ungreased baking sheets.  Bake at 350 degrees for 10-12 minutes or until lightly browned.  Remove to wire racks to cool.  Yield:  10 dozen
