This weekend, I had a lot of leftovers and wanted to make a delicious breakfast but wanted to use up some of the extras. So, I whipped up some breakfast hash.

Here's what you need...

Ingredients

  • 3 tbsp olive oil
  • 1/2 cup diced bell peppers (I used red, yellow and orange)
  • 1/4 diced onion
  • 1/3 cup sliced mushrooms
  • 3 cooked diced potatoes
  • 1 cup diced cooked meat (ham, Polish sausage, chicken, pork or steak will work)
  • 1 tsp seasoning salt
  • fresh parsley
  • 2 eggs

Directions

  1. Heat oil to medium-high heat.
  2. Brown bell peppers, onion and mushrooms for 5 minutes in hot oil.
  3. Add potatoes, meat, parsley and seasoning.
  4. Fry eggs to liking. (Over easy or sunny side up.)
