Wake Up with this Breakfast Hash Recipe
This weekend, I had a lot of leftovers and wanted to make a delicious breakfast but wanted to use up some of the extras. So, I whipped up some breakfast hash.
Here's what you need...
Ingredients
- 3 tbsp olive oil
- 1/2 cup diced bell peppers (I used red, yellow and orange)
- 1/4 diced onion
- 1/3 cup sliced mushrooms
- 3 cooked diced potatoes
- 1 cup diced cooked meat (ham, Polish sausage, chicken, pork or steak will work)
- 1 tsp seasoning salt
- fresh parsley
- 2 eggs
Directions
- Heat oil to medium-high heat.
- Brown bell peppers, onion and mushrooms for 5 minutes in hot oil.
- Add potatoes, meat, parsley and seasoning.
- Fry eggs to liking. (Over easy or sunny side up.)
